For the Brownie:
3 frozen bananas thawed in microwave OR 3 bananas baked in oven until completely brown and soft
1/4 cup Sunbutter (or any nut or seed butter)
1/2 tsp. baking soda
1/4 cup cacao powder
1/4 cup chocolate CHUNKS (get chunks.. trust me on this one.) I use Enjoy Life
For the frosting:
1 small avocado (you will need 1/4 cup mashed)
3 tbsp. Sunbutter (or other nut or seed butter)
3 tbsp cacao powder
2-3 tbsp of maple syrup OR 2 tbsp maple syrup plus 1 tbsp swerve powdered sweetener
1 tbsp plant based milk
Directions:
Preheat oven to 350 F
Toss all brownie ingredients into bowl and mix until there are no dry spots left, scraping sides down as necessary
Coat a 8x8 baking dish with cooking spray and evenly spread batter into dish
Bake for 30-35 minutes. The center may still be soft, but when poking a fork or toothpick into the center it should come out relatively clean
Let cool and make your frosting!
Mash 1/4 cup avocado into large bowl and add remaining frosting ingredients
Use a mixer or whisk to blend ingredients together until smooth
