Ingredients:
1 banana
1/4 cup water
1 scoop protein (Ones I use…Click HERE for Organifi or HERE for Sunwarrior) (use collagen for AIP)
1 scoop Organifi Gold (optional, but gives it a very rich chocolaty flavor. Click HERE 15% off)
1-2 tsp. cacao (optional, use carob for AIP)
2-4 tbsp. plant based milk (or water, the milk just makes it a little creamier)
You may also add in a sweetener such as stevia, maple syrup, or honey (I did not as the bananas made this sweet enough for me)
Topping Options:
Vanilla wafers
1 tbsp nut or seed butter
Coconut whipped topping
(vegan) or cool whip
Chocolate chips (I love Enjoy Life chocolate)
Cereal
Newman Os (aka Oreos ha!)
Directions:
1. Slice one banana and place in a medium pot with 1/4 cup of water
2. Bring water to boil and continue to boil until the banana has completely softened and become almost liquid form (when you go to stir the banana it should break apart very easily)
3. Transfer the banana liquid into a separate bowl and add 1 scoop of protein powder of choice, 1 scoop of Organifi Gold (optional), cacao, and sweetener if using
4. If your mixture is looking very dry add in plant based milk one tablespoon at a time until you achieve your desired pudding consistency
5. Now it’s time to layer! Grab a cup, mason jar, or bowl and add whatever calls to you from your pantry. My favorites are crushed organic vanilla wafters and Enjoy life chocolate chips with a dollop of coco whip (vegan)
