Bell Pepper Nachos (can be AIP, Vegan, Paleo)

Nachos are probably one of my top 3 favorite movie snacks.

It goes:

  1. Truffle popcorn (boujee, I know.)

  2. Buncha crunch (in my popcorn. Yes even with the truffle.)

  3. NACHOS drenched in queso and jalapeños

So considering that I eat one and two together I guess we can say nachos are in my top two movie theatre snacks.

I’ve been off of dairy for some time now, not a huge fan of soy based products, and am allergic to nuts…

so dairy, soy, and cashew cheeses are out.

Fortunately, I have come across two brands of vegan cheese that are nut and soy free and taste like the real deal!

I’m warning you, these cheeses are addicting AF and they taste and melt like regular cheese.

Test out these cheeses on your bell pepper nachos and let me know what you think! The nacho recipe is super simple to throw together.

The comparison of carbs above is an order of the Nachos Bellgrande from Taco Bell (left), versus the entire pan of bell pepper nachos you are about to make.

INGREDIENTS

2 bell peppers, cut into pieces ( chip sized pieces) (Use kohlrabi for AIP)

4oz. ground turkey or beyond ground plant based meat

Cooking spray

1 tsp. Olive or avocado oil

Sea salt to taste

1 tsp. ground cumin (substitute for dried cilantro for AIP)

½ tsp. chili powder (omit for AIP)

½ tsp. garlic powder

1/4 cup shredded cheese (optional)

Optional toppings- avocado, salsa, fresh cilantro

 

ADD ONS:

½ avocado, chopped 

½ cup. Salsa

Cilantro for garnish

 

DIRECTIONS:

  1. Preheat oven to 350° and line a baking sheet with foil or parchment paper

  2. Slice bell peppers into small wedges or kohlrabi into small discs and transfer to a baking sheet

  3. Toss peppers or kohlrabi in olive oil or spray with olive oil cooking spray and arrange on baking sheet. Bake for 8 minutes

  4. Meanwhile, coat a medium sized skillet with cooking spray and add in ground turkey or beyond meat. Season meat with spices listed above and cook on medium heat until fully cooked. 

  5. Remove peppers from oven and top with ground meat and cheese (optional)

  6. Bake peppers once more until cheese has melted

  7. Top with avocado, salsa, and cilantro!

Nutrition varies depending on type of cheese and if adding guac and/or salsa.
