Apricot Glazed Baked Wings-Only 4 Ingredients! (Paleo, AIP, Low Carb)

After recent tummy troubles and countless visits to my GI I’ve been adhering to the AIP diet and a modified version of the low histamine protocol. In the beginning I felt extremely limited with what I could eat, but it’s been a few weeks and I’ve learned how to get creative with my approved food list!

To be honest, I haven’t felt this good in months and am actually excited to continue with the diet and eventually reintroduce some foods back.

After a week of this restrictive protocol my cravings began to subside, but some were just not going anywhere. They had to be quenched.

One major craving was my Dad’s glazed chicken wings. These sweet wings are slathered in a mixture of Saucy Susan (basically an apricot based duck sauce) and BBQ sauce and thrown in the oven until the skin is crispy and the sauce sticky.

My mouth is watering just thinking about it….They are SO addicting.

So rather than making my own AIP approved BBQ sauce, I decided to take an easier route.…

I picked up this jar of Fiordifrutta apricot fruit spread and used it as a sweet and simple glaze for my wings. The ingredients are minimal:

  1. Apricots

  2. Apple juice

  3. Pectin (which is just the fiber from apples)

With this elimination diet I have had to make everything from scratch, but this fruit spread gave me simplicity in putting together this sweet and savory meal!

Apricot Glazed Wings

Ingredients:

- 12 chicken wings

- Sea salt and garlic powder to taste

- 1/3 cup Fiordifrutta apricot fruit spread (click the link or pick this up at Whole Foods)

Directions:

1. Preheat the oven to 375°F

2. Spread wings onto a baking sheet and season with garlic and sea salt

3. Bake wings for 20 minutes

4. Remove from oven, flip wings, and bake for additional 10 minutes

5. Remove wings from oven and brush with apricot fruit spread

6. Broil for about 4-5 minutes, but watch very closely as they can burn quick!!

7. Remove from oven and brush one more time with apricot spread (this is optional)
